Preheat your oven to 200°C (400°F) and lightly grease a tart pan with a removable bottom.
In a large bowl, combine 150 grams of all-purpose flour, 25 grams of granulated sugar, and 0.25 teaspoons of salt. Mix well.
Gradually add 30 milliliters of cold water and mix until the dough comes together. Form it into a disk, wrap in plastic wrap, and refrigerate for at least 15 minutes.
While the dough chills, peel and core the 4 medium Granny Smith apples. Slice them thinly, approximately 3-4 mm thick.
In a medium bowl, combine the apple slices with 1 teaspoon of ground cinnamon, 25 grams of granulated sugar, and 1 teaspoon of vanilla extract. Toss to coat evenly.
Roll out the chilled dough on a lightly floured surface to fit your tart pan. Carefully transfer the dough into the pan and press it to fit snugly. Trim any excess from the edges.
Arrange the apple slices in a circular pattern starting from the outer edge working inwards. Ensure they lie flat.
Bake the tart in the preheated oven for 35-40 minutes, or until the apples are tender and the crust is lightly golden.
While the tart is baking, prepare the glaze by heating 50 grams of apricot jam with 10 milliliters of water until it's smooth. Strain it to remove any fruit pieces.
Once the tart is done, remove it from the oven and immediately brush the apricot glaze over the apples for a shiny finish.
Allow the tart to cool to room temperature before serving. Enjoy your delicious, low-fat French apple tart!
