Ingredients

  • 30 grams unsalted butter
  • 60 grams sugar
  • 3 large egg whites
  • 60 grams ground almonds
  • 50 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a small muffin or financier mold pan with a little butter or cooking spray to prevent sticking.

Step 2

In a small saucepan over medium heat, melt the butter until it becomes golden brown and emits a nutty aroma. This is known as beurre noisette or brown butter. Once achieved, remove it from the heat and allow it to cool slightly.

Step 3

In a mixing bowl, whisk together the sugar, ground almonds, flour, baking powder, and salt until well combined.
