Ingredients

  • 500 ml Non-fat milk
  • 3 tablespoons Cornstarch
  • 50 grams Granulated sugar
  • 2 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

In a medium saucepan, heat the non-fat milk over medium heat until just beginning to steam, but not boiling. Stir occasionally to prevent scorching.

Step 2

In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and salt until the mixture is smooth and pale in color.

Step 3

Gradually pour the hot milk into the egg mixture while continuously whisking. This process is called tempering and it prevents the egg yolks from curdling.

Step 4

Return the mixture to the saucepan and place it over medium heat. Stir constantly with a wooden spoon or a heatproof spatula, making sure to reach the corners of the pan to prevent the custard from sticking.

Step 5

Cook the mixture until it thickens enough to coat the back of the spoon. This should take about 4-5 minutes.

Step 6

Remove the saucepan from the heat and immediately stir in the vanilla extract.

Step 7

For an extra smooth texture, you can strain the custard through a fine-mesh sieve into a clean bowl.

Step 8

Cover the custard with plastic wrap, placing the wrap directly on the surface to prevent a skin from forming. Allow it to cool to room temperature.

Step 9

Once cooled, refrigerate for at least 1 hour before serving. Enjoy the custard on its own or as a topping for your favorite desserts!
