Ingredients

  • 4 cups Green cabbage, finely shredded
  • 1 large Carrot, grated
  • 1 cup Red cabbage, finely shredded
  • 0.5 cup Plain low-fat Greek yogurt
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Celery seed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, and grated carrot. Toss them all together to ensure an even mix.

Step 2

In a separate small bowl, whisk together the plain low-fat Greek yogurt, apple cider vinegar, honey, Dijon mustard, celery seed, salt, and black pepper until the dressing is smooth and well combined.

Step 3

Pour the yogurt dressing over the mixed vegetables in the large mixing bowl. Toss everything together until the cabbage and carrots are fully coated with the dressing.

Step 4

Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to let the flavors meld. For best results, allow the coleslaw to chill for a few hours.

Step 5

Before serving, give the coleslaw a good stir and taste for seasoning, adjusting salt and pepper if necessary.

Step 6

Serve chilled as a refreshing side dish.
