  • 1 tablespoon Olive oil
  • 1 medium Onion
  • 2 Celery stalks
  • 1 medium Carrot
  • 3 cloves Garlic
  • 4 cups Low-sodium chicken broth
  • 2 medium Potatoes
  • 1 Bay leaf
  • 1 teaspoon Thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chopped parsley
  • 1 tablespoon Lemon juice

Directions

Step 1

Scrub the clams under cold running water to remove any sand or debris. Set aside.

Step 2

In a large pot, heat the olive oil over medium heat.

Dice the onion, celery, and carrot. Mince the garlic.

Add the onion, celery, and carrot to the pot. Sauté for about 5 minutes or until the vegetables begin to soften.

Add the minced garlic and sauté for another minute, until fragrant.
