Ingredients

  • 2 large (approximately 8 oz each) Chicken breasts
  • 0.25 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 large Egg whites
  • 1 tablespoon Water
  • 0.75 cup Panko breadcrumbs
  • 0.5 teaspoon Paprika
  • 1 Lemon slices
  • 1 Cooking spray

Directions

Step 1

Lay each chicken breast flat on a cutting board. Use a sharp knife to slice each breast horizontally to create two thinner fillets. You should have four pieces in total.

Step 2

Place a piece of plastic wrap over the chicken fillets. Using a meat mallet, gently pound each fillet to 1/4 inch thickness for even cooking.

Step 3

In a shallow dish, mix together the flour, salt, and pepper.

Step 4

In another shallow bowl, whisk together the egg whites and water until frothy.

Step 5

In a third shallow dish, combine the panko breadcrumbs and paprika.

Step 6

Dredge each chicken fillet in the flour mixture, shaking off excess. Then dip it into the egg white mixture, and finally, coat it with the breadcrumb mixture, pressing gently to adhere.

Step 7

Preheat a large non-stick skillet over medium heat and lightly coat with cooking spray.

Step 8

Add the chicken fillets in batches, cooking for about 3-4 minutes on each side, or until golden brown and cooked through. Ensure internal temperature reaches 165°F (75°C).

Step 9

Remove from skillet and briefly drain on paper towels if needed.

Step 10

Serve immediately with lemon slices on the side for squeezing over the schnitzel.
