  • 6 large Yukon Gold potatoes
  • 2 cups Low-fat cheddar cheese

  • 0 Non-stick cooking spray
  • 0.25 cup Chopped chives or green onions

Directions

Step 1

Preheat your oven to 375°F (190°C). Spray a 9x13-inch baking dish with non-stick cooking spray.

Step 2

Peel and thinly slice the Yukon Gold potatoes. A mandoline slicer is recommended for uniform slices.

Step 3

In a large mixing bowl, combine the non-fat Greek yogurt, reduced-fat cream of chicken soup, garlic powder, salt, and black pepper. Stir until smooth and well-mixed.
