Ingredients

  • 9 sheets whole wheat lasagna noodles
  • 15 ounces low-fat ricotta cheese
  • 2 cups low-fat mozzarella cheese, shredded
  • 0.5 cups low-fat Parmesan cheese, grated
  • 4 cups baby spinach, chopped
  • 1 large zucchini, thinly sliced
  • 1 large egg
  • 3 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of lightly salted water to a boil. Cook the lasagna noodles in boiling water for 8 to 10 minutes. Drain and rinse with cold water.

Step 3

Meanwhile, in a large bowl, combine the low-fat ricotta cheese, egg, garlic powder, dried oregano, dried basil, and black pepper. Mix until well blended.

Step 4

In a separate bowl, combine the low-fat mozzarella cheese and grated low-fat Parmesan cheese. Set aside.

Step 5

Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.

Step 6

Layer 3 lasagna noodles over the sauce. Top with half of the ricotta mixture, followed by half of the spinach, zucchini slices, and 1 cup of mozzarella-Parmesan cheese mixture.

Step 7

Pour another cup of marinara sauce over the top and spread it evenly.

Step 8

Repeat layers: 3 more noodles, remaining ricotta mixture, remaining spinach, zucchini slices, and 1 cup of mozzarella-Parmesan cheese mixture.

Step 9

Top with the last 3 noodles, remaining 1 cup marinara sauce, and sprinkle the last of the mozzarella-Parmesan mixture on top.

Step 10

Cover the baking dish with aluminum foil, making sure it does not touch the cheese.

Step 11

Bake in the preheated oven for 50 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 12

Let the lasagna stand for 10 minutes before slicing and serving.
