Ingredients

  • 8 ounces Whole wheat spaghetti
  • 0.5 teaspoon Salt
  • 2 tablespoons Light butter
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon juice
  • 2 tablespoons Grated Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 0.25 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of water to a boil. Add 1/4 teaspoon of salt and the whole wheat spaghetti. Cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, melt the light butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to let it burn.

Step 3

Add the drained pasta to the skillet with the garlic butter, tossing to coat the pasta evenly.

Step 4

Pour in the reserved pasta water a little at a time, stirring until the pasta is moist and the sauce is silky.

Add the lemon juice, grated Parmesan, parsley, remaining salt, and black pepper. Toss everything together well over low heat until the ingredients are well combined and the cheese has melted into the sauce.
