  • 2 pounds Lean beef chuck roast, trimmed
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 whole Large onion, sliced
  • 3 cloves Garlic cloves, minced
  • 3 whole Carrots, peeled and cut into 1-inch pieces
  • 3 stalks Celery stalks, cut into 1-inch pieces
  • 2 cups Low sodium beef broth
  • 0.5 cup Red wine (optional)
  • 2 tablespoons Tomato paste
  • 2 leaves Bay leaves
  • 2 sprigs Fresh thyme sprigs
  • 2 tablespoons Chopped parsley for garnish

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

Season the beef with salt and black pepper on both sides.

Step 3

In a large Dutch oven, heat the olive oil over medium-high heat.

Sear the beef for about 4-5 minutes on each side until a golden crust forms. Remove the beef and set aside.

In the same pot, add the sliced onion, carrots, and celery. Cook for 5-7 minutes, stirring frequently until the onions are translucent.
