Ingredients

  • 100 grams all-purpose flour
  • 15 grams cornstarch
  • 1 teaspoon baking powder
  • 6 large egg whites
  • 2 large egg yolks
  • 80 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 50 milliliters non-fat milk
  • 30 milliliters canola oil
  • 0.5 teaspoon salt

Directions

Step 1

Preheat your oven to 175°C (347°F) and prepare a 20 cm (8-inch) round cake pan by lining the bottom with parchment paper. Do not grease the sides.

Step 2

In a medium bowl, sift together all-purpose flour, cornstarch, and baking powder. Set aside.

Step 3

In a clean, large mixing bowl, combine the egg whites and salt. Using an electric mixer, beat the egg whites on medium-high speed until they become foamy.

Gradually add half of the sugar (40 grams) into the egg whites while continuing to beat. Beat until stiff peaks form. Set aside.

In another large mixing bowl, whisk together the egg yolks, remaining sugar (40 grams), vanilla extract, non-fat milk, and canola oil until the mixture is smooth and well-combined.

Gently fold the sifted dry ingredients into the egg yolk mixture using a spatula. Mix until there are no visible lumps.
