Ingredients

  • 225 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 150 grams granulated sugar
  • 120 grams unsweetened applesauce
  • 125 grams fat-free Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 200 grams fresh blueberries
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large bowl, combine the granulated sugar and unsweetened applesauce. Beat with an electric mixer on medium speed until well blended, about 2 minutes.

Step 4

Add the Greek yogurt, egg, and vanilla extract to the sugar mixture. Beat until smooth and fully combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Gently fold in the blueberries and lemon zest using a spatula until evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Step 10

Optional: Dust with a light sprinkle of powdered sugar before serving, if desired.
