Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 3 tbsp unsalted butter
  • 1 cup non-fat Greek yogurt
  • 0.5 cup low-fat buttermilk
  • 0 as needed cooking spray
  • 12 oz lean turkey sausage
  • 2 cups skim milk
  • 2 tbsp cornstarch
  • 0.5 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly coat with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3

Cut the cold butter into small cubes and add to the dry ingredients. Use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

Step 4

Add the non-fat Greek yogurt and buttermilk to the flour mixture, stirring just until combined. Be careful not to over-mix.

Step 5

Turn the dough out onto a lightly floured surface. Gently knead it 2-3 times, then roll it out to about 1/2-inch thick. Use a floured biscuit cutter to cut out biscuits, and place them on the prepared baking sheet.

Step 6

Bake the biscuits in the preheated oven for 12-15 minutes, or until lightly golden brown.

Step 7

Meanwhile, for the gravy, heat a large skillet over medium heat. Add the lean turkey sausage, breaking it up with a spatula as it cooks, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Step 8

In a medium bowl, whisk together the skim milk and cornstarch until completely smooth.

Step 9

Pour the milk mixture into the skillet with the sausage. Add the black pepper, garlic powder, and onion powder. Stir continuously until the gravy thickens, about 5 minutes. Adjust seasoning if needed.

Step 10

Serve the freshly baked biscuits with a generous ladle of hot sausage gravy over the top.
