Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 1.5 tablespoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Non-fat Greek yogurt
  • 0.5 cup Unsweetened applesauce
  • 1.25 cups Skim milk
  • 4 Large egg whites
  • 2 teaspoons Vanilla extract
  • 3 cups Powdered sugar
  • 0.5 cup Light butter, softened
  • 1.5 teaspoons Vanilla extract for icing
  • 2 tablespoons Skim milk for icing

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

In a separate bowl, mix the Greek yogurt, applesauce, skim milk, egg whites, and 2 teaspoons of vanilla extract until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Step 5

Divide the batter evenly between the prepared pans and smooth the tops with a spatula.

Step 6

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean.

Step 7

Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.

Step 8

For the vanilla buttercream icing, beat the light butter in a large bowl until creamy.

Step 9

Gradually add the powdered sugar, alternating with the 2 tablespoons of skim milk, beating until smooth after each addition.

Step 10

Mix in 1.5 teaspoons of vanilla extract until well incorporated and the icing is light and fluffy.

Step 11

Once the cakes are fully cooled, spread a layer of icing on top of one cake layer. Place the second layer on top and cover the entire cake with the remaining icing.

Step 12

Decorate as desired and refrigerate until ready to serve.
