Ingredients

  • 300 grams all-purpose flour
  • 7 grams active dry yeast
  • 125 milliliters skim milk
  • 50 grams granulated sugar
  • 1 teaspoon salt
  • 30 grams unsalted butter
  • 1 large egg
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 120 grams raspberry jam
  • 30 grams powdered sugar

Directions

Step 1

Warm the skim milk until it is lukewarm (about 35°C or 95°F) and mix it with the active dry yeast and 1 tablespoon of the granulated sugar. Set aside for 5-10 minutes, or until foamy.

Step 2

In a large mixing bowl, combine the flour, remaining granulated sugar, and salt.

Step 3

Melt the butter and let it cool slightly.

Step 4

Once the yeast mixture is foamy, add it to the flour mixture along with the melted butter, egg, lemon zest, and vanilla extract.

Step 5

Mix the dough ingredients using a wooden spoon or your hands until a smooth dough forms. Turn it onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

Step 6

Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.

Step 7

Punch down the dough and divide it into 12 equal pieces. Roll each piece into a smooth ball.

Step 8

Place the balls on a baking sheet lined with parchment paper. Cover them again and let them rise for an additional 30 minutes.

Step 9

Preheat your oven to 180°C (350°F). Once the doughnuts have risen, bake them in the preheated oven for about 12-15 minutes, or until lightly golden brown.

Step 10

Allow the doughnuts to cool slightly. Using a piping bag fitted with a small nozzle, fill each doughnut with approximately 2 teaspoons of raspberry jam by injecting it into the side of each doughnut.

Step 11

Dust each Berliner with powdered sugar before serving. Enjoy!
