Ingredients

  • 400 grams lean beef tenderloin
  • 1 medium shallot
  • 1 tablespoon capers
  • 2 teaspoons low-fat mustard
  • 1 teaspoon low-fat Worcestershire sauce
  • 1 large egg yolk
  • 2 tablespoons fresh parsley
  • 1 tablespoon chives
  • 2 tablespoons cornichons
  • 1 teaspoon white vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by placing the lean beef tenderloin in the freezer for about 15 minutes. This makes it easier to dice finely.

Step 2

While the beef is chilling, finely dice the shallot, capers, and cornichons. Set aside.

Step 3

Finely chop the fresh parsley and chives, and set them aside separately.

Step 4

Once slightly frozen, remove the beef from the freezer. Using a sharp knife, cut the beef into very small dice.
