Ingredients

  • 500 grams Lean ground beef
  • 1 tablespoon Olive oil
  • 1 medium Fresh onion, chopped
  • 2 Garlic cloves, minced
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 120 milliliters Low-sodium beef broth
  • 240 milliliters Tomato sauce
  • 8 small Whole wheat tortillas
  • 400 grams Re-fried beans
  • 100 grams Reduced-fat cheddar cheese, shredded
  • 100 grams Iceberg lettuce, shredded
  • 1 medium Tomato, diced
  • 2 tablespoons Fresh cilantro, chopped
  • 1 Lime, cut into wedges

Directions

Step 1

In a large skillet over medium heat, add olive oil and allow it to heat up before adding chopped onions. Sauté the onions for about 3 minutes until they become translucent.

Step 2

Add minced garlic to the skillet and cook for an additional minute until fragrant.

Step 3

Increase the heat to medium-high and add the lean ground beef to the skillet. Cook until the beef is browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes.

Step 4

Once the beef is browned, drain any excess fat from the skillet.

Step 5

Reduce the heat to medium and stir in cumin, chili powder, black pepper, and salt into the beef mixture.

Step 6

Add the low-sodium beef broth and tomato sauce to the skillet. Stir to combine and bring to a simmer. Allow the mixture to cook for about 10 minutes, stirring occasionally, until the liquid is reduced and the flavors are well combined.

Step 7

Warm the whole wheat tortillas by wrapping them in aluminum foil and placing them in a preheated oven at 180°C (350°F) for about 5 minutes.

Step 8

Spread a thin layer of re-fried beans over each warm tortilla.

Step 9

Spoon approximately two tablespoons of the beef mixture onto each tortilla, followed by a sprinkle of reduced-fat cheddar cheese and shredded lettuce.

Step 10

Top with diced tomatoes and freshly chopped cilantro.

Step 11

Fold the sides of the tortilla inward, then roll from the bottom up, enclosing the filling tightly.

Step 12

Serve the burritos with lime wedges on the side for added zest and enjoy your low-fat classic beef burritos!
