Ingredients

  • 12 ounces Whole wheat elbow macaroni
  • 3 cups Low-fat milk
  • 3 tablespoons Cornstarch
  • 2 cups Shredded low-fat sharp cheddar cheese
  • 1 cup Shredded low-fat mozzarella cheese
  • 1 tablespoon Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Panko breadcrumbs
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish lightly with cooking spray.

Step 2

Cook the whole wheat elbow macaroni according to the package instructions, drain, and set aside.

Step 3

In a medium saucepan over medium heat, whisk together 2.5 cups of the low-fat milk and the cornstarch until the mixture begins to thicken, about 3-5 minutes.

Step 4

Reduce the heat to low and slowly stir in the sharp cheddar and mozzarella cheeses, a little at a time, until melted and smooth.

Step 5

Whisk in the remaining 0.5 cup of low-fat milk, Parmesan cheese, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Continue stirring until well combined and smooth, then remove from heat.

Step 6

In a large bowl, combine the cooked macaroni with the cheese sauce. Stir until the macaroni is thoroughly coated with the cheese sauce.

Step 7

Pour the macaroni and cheese mixture into the prepared baking dish.

Step 8

In a small bowl, mix the panko breadcrumbs with olive oil until the breadcrumbs are lightly coated.

Step 9

Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Step 10

Bake in the preheated oven for 20-25 minutes or until the top is golden brown and the cheese is bubbly.

Step 11

Allow to cool for a few minutes before serving. Enjoy the delightful, healthier version of classic baked mac and cheese!
