Ingredients

  • 4 medium Granny Smith apples
  • 1 cup Rolled oats
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 1 cup Water
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Step 2

Wash and core the apples, ensuring not to cut through the bottom to create a 'pocket' for the filling.

Step 3

In a medium bowl, combine the rolled oats, brown sugar, ground cinnamon, ground nutmeg, and vanilla extract, mixing well until all ingredients are evenly distributed.

Step 4

Fill each cored apple with the oat mixture, packing it tightly to ensure there's plenty of filling in each apple.

Step 5

Place the filled apples in a baking dish. Pour the water and lemon juice into the bottom of the dish to create steam and help the apples cook evenly.

Step 6

Cover the baking dish with aluminum foil to prevent the apples from drying out during baking.

Step 7

Bake in the preheated oven for about 30 to 35 minutes, or until the apples are tender when pierced with a fork.

Step 8

Remove from the oven and let cool slightly before serving. Enjoy the baked apples warm, optionally topped with a dollop of low-fat yogurt for an extra treat.
