Ingredients

  • 1 large Wholegrain baguette
  • 300 grams Lean beef sirloin
  • 2 teaspoons Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Lettuce leaves
  • 1 large Tomato
  • 0.5 medium Red onion
  • 2 tablespoons Low-fat mayonnaise
  • 1 teaspoon Dijon mustard

Directions

Step 1

Preheat the oven to 200°C (390°F).

Step 2

In a small bowl, mix together the olive oil, thyme, rosemary, garlic powder, salt, and black pepper to create a marinade.

Step 3

Place the beef sirloin on a baking tray and rub the herb mixture evenly over all sides of the beef.

Step 4

Roast the beef in the preheated oven for 30-35 minutes, or until it reaches your desired doneness. Once done, remove from the oven and let it rest for 10 minutes before slicing thinly against the grain.

Step 5

While the beef roasts, slice the baguette into four equal portions and then slice each piece horizontally to open without cutting all the way through.

Step 6

Spread a light layer of low-fat mayonnaise on both inner sides of each baguette piece.

Step 7

In a small bowl, mix the low-fat mayonnaise with Dijon mustard to make the dressing, and set aside.

Step 8

Wash the lettuce leaves, slice the tomato into thin rounds, and slice the red onion into thin rings.

Step 9

Once the beef is rested and sliced, assemble the sandwiches by layering lettuce, tomato slices, some beef slices, and onion rings inside each baguette.

Step 10

Drizzle a small amount of the mustard dressing over the fillings.

Step 11

Close the baguette gently and serve immediately or wrap them for a delicious on-the-go meal.
