Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 bunch Fresh cilantro
  • 3 tablespoons Lime juice
  • 0.5 cup Low-sodium chicken broth
  • 3 pieces Garlic cloves
  • 1 tablespoon Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Begin by mincing the garlic cloves and roughly chopping the cilantro leaves. Set aside some cilantro for garnishing.

Step 2

In a bowl, combine lime juice, low-sodium chicken broth, minced garlic, olive oil, honey, ground cumin, salt, and pepper. Whisk until well mixed.

Step 3

Place the chicken breasts in a shallow dish and pour the marinade over them. Turn the chicken to coat all sides.

Step 4

Cover the dish with plastic wrap and marinate in the refrigerator for at least 30 minutes, aiming for up to 2 hours for fuller flavor.

Step 5

Preheat a large non-stick skillet over medium heat.

Step 6

Once hot, add the marinated chicken breasts to the skillet, discarding the leftover marinade.

Step 7

Cook the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

Step 8

Remove the chicken from the skillet and let it rest for a few minutes before slicing.

Step 9

Serve the chicken hot, topped with the reserved chopped cilantro for garnish.
