Ingredients

  • 250 ml Water
  • 30 grams Unsalted Butter
  • 1 pinch Salt
  • 1 tablespoon Granulated Sugar
  • 150 grams All-Purpose Flour
  • 4 large Eggs
  • 50 grams Pearl Sugar

Directions

Step 1

Preheat your oven to 200°C (400°F) and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, combine water, unsalted butter, salt, and granulated sugar. Bring to a boil over medium heat, stirring occasionally until the butter has melted.

Step 3

Remove the pan from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Step 4

Return the pan to low heat and continue to stir for another 2 minutes to dry out the dough slightly.

Step 5

Transfer the dough to a large mixing bowl or the bowl of a stand mixer. Let it cool for about 5 minutes.

Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. The dough should be thick but still fall from the spoon in a smooth, ribbon-like manner.

Spoon the dough into a piping bag fitted with a large plain tip. Pipe small mounds of dough onto the prepared baking sheets, each about the size of a cherry, leaving about 2 inches of space between each one.
