  • 1 inch piece ginger
  • 3 garlic cloves
  • 2 tablespoons tomato paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 0.25 cup low-fat yogurt
  • 1 cup water
  • 2 tablespoons fresh cilantro

Directions

Step 1

Drain and rinse the canned chickpeas under cold water and set aside.

Step 2

Finely chop the onion, garlic, and ginger.

Step 3

Heat the olive oil in a large non-stick pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until aromatic.

Step 4

Add the chopped onion to the pan and sauté until they become translucent, about 5-7 minutes.

Step 5

Stir in the ginger and garlic, and cook for another 1 minute until fragrant.

Step 6

Mix in the tomato paste and cook for an additional 2 minutes, stirring frequently.

Step 7

Add the ground coriander, garam masala, turmeric powder, red chili powder, and salt. Stir and let the spices cook for another minute.

Step 8

Add the chickpeas to the pan along with the water, stirring to combine. Bring to a simmer.

Step 9

Reduce the heat to low, cover the pan, and let the curry simmer for about 15-20 minutes, stirring occasionally.

Step 10

Remove the lid and stir in the low-fat yogurt, combining everything well. Cook for another 2-3 minutes to let the flavors meld.

Step 11

Garnish with fresh cilantro before serving.

Step 12

Serve the low-fat cholay hot with rice or naan.
