  • 75 grams Granulated sugar
  • 4 large Egg yolks

  • 30 grams Unsweetened cocoa powder
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 20 grams Powdered sugar
  • 100 grams Low-fat cream cheese
  • 100 grams Low-fat Greek yogurt
  • 2 tablespoons Honey
  • 50 grams Dark chocolate, finely chopped

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 15x10-inch jelly roll pan with parchment paper, letting some paper overhang for easy removal after baking.

Step 2

In a clean, dry bowl, whisk the egg whites until they form soft peaks. Gradually add half of the granulated sugar (about 37 grams) and continue whisking until stiff peaks form.

In another bowl, whisk the egg yolks with the remaining granulated sugar until pale and creamy. Stir in the vanilla extract.

Sift the flour, cocoa powder, baking powder, and salt over the yolk mixture. Gently fold together until just combined.
