Ingredients

  • 6 pieces plain rice cakes
  • 60 grams dark chocolate chips
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons nonfat milk
  • 0.5 teaspoon sea salt

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper. Place the rice cakes on top, making sure they are not overlapping.

Step 2

In a microwave-safe bowl, combine the dark chocolate chips and nonfat milk. Heat in the microwave in 20-second intervals, stirring in between, until the chocolate is melted and smooth.

Step 3

Add the honey, unsweetened cocoa powder, vanilla extract, and sea salt to the melted chocolate mixture. Stir until all the ingredients are fully incorporated and the mixture is smooth.

Step 4

Using a spoon, generously spread the chocolate mixture over the top of each rice cake, ensuring even coverage.

Step 5

Allow the chocolate-coated rice cakes to sit at room temperature for about 5 minutes or until the chocolate has set slightly. For a quicker set, place them in the fridge for a couple of minutes.

Step 6

Serve immediately, or store the chocolate rice cakes in an airtight container for up to two days.
