Ingredients

  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 0.33 cup unsweetened cocoa powder (divided)
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup low-fat milk
  • 0.25 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 0.75 cup brown sugar (lightly packed)
  • 1.5 cups hot water

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with non-stick spray or a small amount of oil.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, 2 tablespoons of unsweetened cocoa powder, baking powder, and salt until well combined.

Step 3

Add the low-fat milk, unsweetened applesauce, and vanilla extract to the dry ingredients, and stir until the batter is smooth and uniform.

Step 4

Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 5

In a small bowl, mix the brown sugar and the remaining unsweetened cocoa powder (about 3 tablespoons) together.

Step 6

Sprinkle the brown sugar and cocoa mixture evenly over the batter in the baking dish.

Step 7

Slowly pour the hot water over the top of the layers in the baking dish. Do not stir; this step creates the pudding layer as the cake bakes.

Step 8

Place the dish in the preheated oven and bake for 35 minutes, or until the top of the cake is set and springs back when touched lightly.

Step 9

Remove from the oven and let the cake cool for at least 10 minutes. The cake will thicken slightly as it cools.

Step 10

Serve warm, spooning the gooey pudding layer from the bottom along with the cakey top layer. Optionally, top with a dollop of low-fat whipped cream or a sprinkle of powdered sugar.
