Ingredients

  • 2 cups Whole wheat pastry flour
  • 1 packet Active dry yeast
  • 0.75 cup Skim milk
  • 0.5 cup Unsweetened applesauce
  • 2 tablespoons Sugar
  • 0.5 teaspoon Salt
  • 1 large Egg white
  • 1 teaspoon Vanilla extract
  • 0.5 cup Semisweet chocolate chips
  • 1 as needed Cooking spray

Directions

Step 1

In a small saucepan, warm the skim milk over low heat until lukewarm, ensuring it is not too hot to touch.

Step 2

In a mixing bowl, dissolve the active dry yeast and sugar in the warm milk. Let it stand for about 5-10 minutes until frothy.

Step 3

In a large bowl, combine whole wheat pastry flour and salt. Make a well in the center.

Step 4

Pour the yeast mixture, unsweetened applesauce, egg white, and vanilla extract into the well. Mix until a dough forms.

Step 5

Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.

Step 6

Place the dough in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Step 7

Preheat your oven to 375°F (190°C). Lightly coat a baking sheet with cooking spray.

Step 8

Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 12x8 inches.

Step 9

Cut the dough into 8 triangles. Place a few chocolate chips on the wide end of each triangle.

Step 10

Roll the triangles from the wide end to the tip to form croissant shapes, ensuring the tips are tucked underneath.

Step 11

Place the croissants on the prepared baking sheet, leaving space in between them.

Step 12

Lightly spray the tops of the croissants with cooking spray.

Step 13

Bake in the preheated oven for 18-20 minutes or until golden brown.

Step 14

Allow the croissants to cool slightly before serving to let the chocolate set.
