Ingredients

  • 1 cup water
  • 4 tablespoons light unsalted butter
  • 0.25 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup low-fat milk
  • 2 tablespoons cornstarch
  • 2 tablespoons cocoa powder
  • 0.25 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, bring 1 cup of water, 4 tablespoons of light unsalted butter, and 0.25 teaspoon of salt to a boil over medium heat.

Step 3

Remove from heat and stir in 1 cup of all-purpose flour all at once. Return to heat and stir vigorously until the mixture forms a ball and leaves the sides of the pan, about 1-2 minutes.

Step 4

Transfer the dough to a mixing bowl and let it cool slightly for about 5 minutes.

Step 5

Add 4 large eggs one at a time into the dough, mixing well after each addition until smooth and glossy.

Step 6

Spoon or pipe small mounds (about 1 tablespoon each) onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Bake for 20 minutes, until puffed and golden brown. Remove and let cool completely on a wire rack.

Step 8

For the filling, in a small saucepan, whisk together 1 cup of low-fat milk, 2 tablespoons of cornstarch, 2 tablespoons of cocoa powder, and 0.25 cup of granulated sugar until smooth.

Step 9

Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil.

Step 10

Remove from heat and stir in 1 teaspoon of vanilla extract and 3 tablespoons of semi-sweet chocolate chips, stirring until the chocolate is melted and smooth.

Step 11

Transfer the chocolate filling to a bowl, cover with plastic wrap touching the surface to prevent a skin from forming, and let cool until just warm.

Step 12

Slice the cooled puffs in half horizontally and spoon the chocolate filling into the bottom halves, then replace the tops.

Step 13

Refrigerate until ready to serve, allowing the chocolate filling to set firm.
