Ingredients

  • 4 ears fresh corn on the cob
  • 0.5 teaspoons chipotle powder
  • 0.5 teaspoons ground cumin
  • 0.25 teaspoons salt
  • 2 tablespoons fresh lime juice
  • 2 tablespoons low-fat plain yogurt
  • 2 tablespoons fresh cilantro
  • 1 whole green onion
  • 1 as needed cooking spray

Directions

Step 1

Start by cleaning and shucking 4 ears of fresh corn, removing the husks and silk.

Step 2

Preheat a grill or grill pan over medium-high heat and lightly coat it with cooking spray.

Step 3

Place the corn cobs on the grill and cook, turning occasionally, until the corn is tender and slightly charred, about 8 to 10 minutes.

Step 4

While the corn is grilling, finely chop 2 tablespoons of fresh cilantro and slice 1 green onion thinly. Set aside.

Step 5

In a small bowl, mix 0.5 teaspoon of chipotle powder, 0.5 teaspoon of ground cumin, and 0.25 teaspoon of salt.

Step 6

In another bowl, stir together 2 tablespoons of fresh lime juice and 2 tablespoons of low-fat plain yogurt until well combined.

Step 7

Once the corn is cooked, remove it from the grill and let it cool for a couple of minutes.

Step 8

Using a sharp knife, carefully cut the corn kernels off the cob and place them in a large mixing bowl.

Step 9

Add the chipotle powder mixture to the corn and toss well to coat the corn evenly with the spices.

Step 10

Pour the lime and yogurt dressing over the spiced corn and mix to combine.

Step 11

Garnish the corn with freshly chopped cilantro and sliced green onion before serving.

Step 12

Serve immediately while warm or let it cool and serve as a chilled salad.
