Ingredients

  • 6 large eggs
  • 4 cups water
  • 0.5 cup soy sauce
  • 2 tablespoons black tea leaves
  • 1 whole cinnamon stick
  • 2 pieces star anise
  • 1 teaspoon Sichuan peppercorns
  • 1 tablespoon sugar
  • 1 teaspoon salt

Directions

Step 1

Place the eggs in a medium-sized pot and cover them with cold water. Bring the water to a boil over medium-high heat.

Once boiling, reduce the heat to a gentle simmer and cook the eggs for 8 minutes.

Step 3

Remove the eggs with a slotted spoon and cool them under running cold water. Gently crack the eggshells all over with the back of a spoon, ensuring the shell remains intact.

Empty the pot, return the cracked eggs to it, and add 4 cups of water, soy sauce, tea leaves, cinnamon stick, star anise, Sichuan peppercorns, sugar, and salt.
