Ingredients

  • 6 cups low sodium chicken broth
  • 2 cups water
  • 8 ounces rice noodles
  • 1 piece boneless, skinless chicken breast
  • 2 tablespoons soy sauce
  • 1 inch piece, sliced thinly fresh ginger
  • 3 cloves, minced garlic
  • 1 julienned large carrot
  • 2 heads, quartered baby bok choy
  • 3 stalks, sliced green onions
  • 1 cup, sliced mushrooms
  • 0.5 cup, chopped fresh cilantro
  • 1 teaspoon sesame oil
  • 1 pinch white pepper

Directions

Step 1

In a large pot, combine the chicken broth and water. Bring to a boil over high heat.

Step 2

While waiting for the broth to boil, slice the chicken breast thinly.

Step 3

Once boiling, reduce the heat to medium-low and add the sliced ginger and minced garlic to the pot. Simmer for 5 minutes.

Add the sliced chicken to the pot and cook for about 10 minutes until the chicken is cooked through.
