Ingredients

  • 4 medium Russet potatoes
  • 0 Olive oil spray
  • 0.5 teaspoon Salt
  • 1 pound Ground turkey (93% lean)
  • 1 large, chopped Onion
  • 3 minced Garlic cloves
  • 1 chopped Red bell pepper
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 14.5-ounce can Canned diced tomatoes (no salt added)
  • 1 15-ounce can Canned kidney beans (rinsed and drained)
  • 1 cup Reduced-fat shredded cheddar cheese
  • 2 sliced Green onions

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash the russet potatoes thoroughly and cut them into 1/4 inch thick fries.

Step 3

Pat dry the fries with a paper towel to remove excess moisture.

Step 4

Line a baking sheet with parchment paper and spread out the fries in a single layer.

Step 5

Spray the fries lightly with olive oil spray and sprinkle with salt.

Step 6

Bake the fries for 25-30 minutes, turning halfway through, until golden brown and crispy.

Step 7

While the fries are baking, heat a large skillet over medium heat and add the ground turkey.

Step 8

Cook the turkey for about 5-7 minutes until browned, breaking it up into small pieces as it cooks.

Step 9

Add the chopped onion, minced garlic, and chopped bell pepper to the skillet and cook for another 5 minutes.

Step 10

Stir in the chili powder, ground cumin, and paprika, and cook for another minute until the spices are fragrant.

Step 11

Add the canned diced tomatoes and kidney beans, stirring to combine. Let the chili simmer for about 20 minutes to allow the flavors to meld.

Step 12

Once the fries are done, remove them from the oven and place them on a serving platter.

Step 13

Pour the homemade turkey chili over the fries and sprinkle the reduced-fat cheddar cheese evenly on top.

Step 14

Place the platter back in the oven for 5 minutes or until the cheese is melted.

Step 15

Garnish with sliced green onions before serving.
