  • 4 pieces Corn tortillas
  • 2 pieces Boneless, skinless chicken breast

  • 4 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 1 medium Avocado
  • 2 tablespoons Cilantro (fresh)
  • 0.5 cup Low-fat Greek yogurt
  • 2 tablespoons Lime juice (freshly squeezed)
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Cumin powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly spray the corn tortillas with olive oil spray and arrange them on a baking sheet. Bake for 8-10 minutes or until crispy, flipping halfway through. Set aside.
