  • 1 lb Boneless, skinless chicken breasts

  • 0.25 tsp Freshly ground black pepper
  • 2 cups Masa harina (corn masa flour)
  • 1 tsp Baking powder
  • 0.5 tsp Salt (for masa)
  • 0.5 cup Low-fat plain Greek yogurt
  • 1.5 cups Warm chicken broth
  • 1 cup Red or green enchilada sauce

Directions

Step 1

Place the dried corn husks in a large bowl, cover them with warm water, and soak for 30 minutes to make them pliable. Drain and pat dry when ready to assemble.

In a medium saucepan, add the chicken breasts and cover them with 2 cups of low-sodium chicken broth. Bring to a boil, then reduce to a simmer. Cook for about 20 minutes or until the chicken is cooked through and tender.

Remove the chicken from the pot and let it cool slightly. Shred the chicken using two forks and set aside.

In a large steamer pot, arrange the tamales upright, open-side up. Add enough water to the pot to create steam but not submerge the tamales.
