Ingredients

  • 500 grams boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 2 units garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 2 units green onion, chopped
  • 1 unit jalapeño, seeded and chopped
  • 3 tablespoons lime juice
  • 1 cup non-fat Greek yogurt
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the chicken breast into 1-inch cubes.

Step 2

In a large bowl, combine the olive oil, minced garlic, lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Add the chicken cubes and toss to coat. Let it marinate for at least 15 minutes.

Step 3

While the chicken marinates, prepare the green sauce. In a food processor, combine the parsley, cilantro, green onion, jalapeño, lime juice, Greek yogurt, and the remaining salt and pepper. Blend until smooth. Adjust seasoning if needed.

Step 4

Preheat a grill or grill pan over medium-high heat.

Step 5

Thread the marinated chicken cubes onto skewers.

Step 6

Grill the chicken skewers for about 6-8 minutes on each side, or until the chicken is cooked through and has a nice char.

Step 7

Serve the chicken skewers hot, with the green sauce on the side for dipping.
