Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 2 large egg whites
  • 4 whole wheat buns
  • 0.5 cup low-fat Greek yogurt
  • 2 tablespoons honey mustard
  • 4 romaine lettuce leaves
  • 4 slices sliced tomatoes
  • 1 medium, sliced avocado
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 as needed olive oil spray

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

Step 2

Place the chicken breasts on a cutting board. Using a sharp knife, carefully slice each breast in half horizontally to create two thin pieces, resulting in four pieces total.

Step 3

In a shallow dish, mix the whole wheat breadcrumbs with smoked paprika, garlic powder, salt, and black pepper.

Step 4

In another shallow dish, whisk the egg whites until slightly frothy.

Step 5

Dip each piece of chicken into the egg whites, allowing any excess to drip off, then coat thoroughly in the breadcrumb mixture. Press lightly to ensure a good coating.

Step 6

Place the coated chicken pieces on the prepared baking sheet. Lightly spray each piece with olive oil spray.

Step 7

Bake in the preheated oven for 25-30 minutes, turning once, until the chicken is cooked through and the coating is golden brown and crispy.

Step 8

While the chicken bakes, mix the low-fat Greek yogurt with honey mustard in a small bowl to create the burger sauce.

Step 9

To assemble the burgers, spread a spoonful of the yogurt and honey mustard sauce on the bottom half of each whole wheat bun.

Step 10

Layer a piece of crispy chicken schnitzel, a leaf of romaine lettuce, a slice of tomato, and a few avocado slices onto each bun.

Step 11

Top with the remaining bun halves, and serve immediately.
