  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup Brown rice

  • 2 cups Fresh spinach
  • 4 pieces Whole wheat tortillas
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro

Directions

Step 1

Cook the brown rice in the low-sodium chicken broth according to the package instructions. Once cooked, set aside to cool slightly.

Step 2

While the rice is cooking, trim any excess fat from the chicken breasts and cut them into thin strips.
