Ingredients

  • 2 pieces boneless, skinless chicken breasts

  • 3 tablespoons all-purpose flour

  • 1 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped
  • 1 cup orzo pasta
  • 4 cups water
  • 1 teaspoon salt (for boiling orzo)

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound to an even thickness of about 1/2 inch.

Step 2

Season both sides of the chicken breasts with 1/2 teaspoon salt and 1/2 teaspoon black pepper.

Lightly dredge the seasoned chicken in the all-purpose flour, shaking off any excess.
