Ingredients

  • 300 grams whole wheat pasta
  • 2 units boneless, skinless chicken breasts
  • 100 grams low-fat Greek yogurt
  • 1 cup fresh basil leaves
  • 1 cup baby spinach leaves
  • 2 tablespoons pine nuts
  • 2 units garlic cloves
  • 30 grams parmesan cheese, grated
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by cooking the whole wheat pasta according to the package instructions in a large pot of salted boiling water until al dente. Once cooked, drain and set aside.

Step 2

While the pasta is cooking, prepare the chicken. Season the chicken breasts with salt and black pepper on both sides.

Heat 1 tablespoon of the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and let rest, then slice into thin strips.
