Ingredients

  • 12 pieces Manicotti shells
  • 1.5 pounds Chicken breast, boneless and skinless
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Non-fat ricotta cheese
  • 0.5 cup Parmesan cheese, grated
  • 2 large Egg whites
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Fresh basil, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Marinara sauce, low fat
  • 1 cup Part-skim mozzarella cheese, shredded
  • 1 as needed Cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a large pot, bring water to a boil and cook manicotti shells according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet over medium heat, spray cooking spray and add chopped onion and minced garlic. Cook until onions are translucent, about 5 minutes.

Add chicken breast to the skillet and cook until no longer pink, about 7-10 minutes. Remove from heat and let cool slightly.
