  • 4 pieces boneless, skinless chicken breasts
  • 2 pieces large eggs
  • 2 tablespoons water
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 cup low-sodium chicken broth
  • 0.25 cup fresh lemon juice
  • 0.25 cup white wine
  • 0.5 teaspoon garlic powder
  • 2 tablespoons fresh parsley

Directions

Step 1

Place the chicken breasts one at a time between two sheets of plastic wrap or in a large zip-top bag. Pound gently with a mallet or rolling pin until the breasts are about 1/2 inch thick.

In a shallow dish or bowl, beat the eggs with the water. Place the flour in another shallow dish and mix with the salt and pepper.
