Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium yellow bell pepper
  • 1 medium red onion
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 2 tablespoons lime juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 large whole wheat tortillas
  • 0.5 cup non-fat Greek yogurt
  • 0.25 cup cilantro leaves

Directions

Step 1

Slice the chicken breasts into thin strips and set aside.

Step 2

Cut the red, green, and yellow bell peppers into thin strips. Also, slice the red onion into thin strips.

Step 3

In a large skillet, heat the olive oil over medium-high heat.

Add the chicken strips to the skillet and sprinkle with chili powder, ground cumin, garlic powder, salt, and black pepper. Cook for about 5-7 minutes, until the chicken is cooked through and no longer pink inside.
