Ingredients

  • 3 cups Cooked chicken breast, shredded
  • 1 cup Low-fat shredded cheddar cheese

  • 8 pieces Corn tortillas
  • 0 Olive oil spray
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 2 tablespoons Chopped fresh cilantro (optional for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly spray a 9x13-inch baking dish with olive oil spray.

Step 2

In a large mixing bowl, combine the shredded chicken, 1/2 cup of low-fat shredded cheddar cheese, Greek yogurt, diced green chiles, cumin, and garlic powder. Mix until well combined.

Step 3

Warm the corn tortillas in the microwave for 20-30 seconds so they are pliable and easier to roll.

Spread about 1/2 cup of enchilada sauce evenly across the bottom of the prepared baking dish.
