Ingredients

  • 2 pieces (approx. 6 oz each) Skinless, boneless chicken breasts
  • 0.5 cup Low-fat buttermilk
  • 0.25 cup Pickle juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Baking powder
  • 0.75 cup All-purpose flour
  • 0.75 cup Whole wheat breadcrumbs
  • 2 large Egg whites
  • 0 as needed Non-stick cooking spray
  • 2 pieces Whole wheat hamburger buns
  • 2 pieces Lettuce leaves
  • 4 pieces Tomato slices
  • 4 slices Dill pickle chips

Directions

Step 1

Pound the chicken breasts gently to an even thickness of about 1/2 inch to ensure even cooking.

Step 2

In a bowl, mix the low-fat buttermilk and pickle juice. Submerge the chicken breasts in the mixture, cover, and refrigerate for at least 30 minutes to marinate.

Step 3

Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with non-stick cooking spray.

Step 4

In a shallow dish, combine the flour, salt, pepper, paprika, garlic powder, onion powder, and baking powder.

Step 5

In a separate shallow dish, beat the egg whites until frothy.

Step 6

Place the whole wheat breadcrumbs in a third shallow dish.

Step 7

Remove the chicken breasts from the marinade and pat dry with paper towels.

Step 8

Dip each chicken breast first into the flour mixture, then into the egg whites, and finally coat with the breadcrumbs. Press the breadcrumbs onto the chicken to ensure a good coating.

Step 9

Place the coated chicken breasts onto the prepared baking sheet.

Step 10

Spray the tops of the chicken lightly with non-stick cooking spray to help them crisp up in the oven.

Step 11

Bake in the preheated oven for 12-15 minutes, or until the chicken is cooked through and the coating is golden brown. Use a meat thermometer to check that the internal temperature has reached 165°F (74°C).

Step 12

Toast the whole wheat hamburger buns lightly.

Step 13

Assemble each sandwich by placing a cooked chicken breast on the bottom half of each bun. Top with lettuce, tomato slices, and dill pickle chips before adding the top bun.

Step 14

Serve immediately and enjoy your low-fat Chick-fil-A style chicken sandwich!
