Ingredients

  • 300 grams chestnut puree
  • 150 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 120 milliliters low-fat milk
  • 4 large egg whites
  • 80 grams honey
  • 1 teaspoon vanilla extract
  • 100 grams unsweetened applesauce
  • 50 grams chopped chestnuts

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch round cake pan with a bit of cooking spray or line it with parchment paper.

Step 2

In a large bowl, whisk together the chestnut puree, low-fat milk, egg whites, honey, vanilla extract, and applesauce until smooth.

Step 3

In another bowl, sift together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet chestnut mixture until just combined. Do not overmix.

Step 4

Gently fold in the chopped chestnuts, ensuring they are evenly distributed throughout the batter.

Step 5

Pour the batter into the prepared cake pan, smoothing the top with a spatula to ensure even baking.

Step 6

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Remove the cake from the oven and allow it to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Step 8

Once cooled, dust lightly with confectioner's sugar if desired before serving.
