Ingredients

  • 200 grams All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 150 grams Low-fat Greek yogurt
  • 100 grams Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 250 grams Fresh cherries, pitted and halved
  • 1 teaspoon Lemon zest
  • 60 ml Low-fat milk
  • 50 ml Vegetable oil
  • 1 tablespoon Icing sugar for dusting

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch round cake pan lightly with oil or line it with parchment paper.

Step 2

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, beat the eggs and sugar together using an electric mixer on medium speed until the mixture is thick and pale, about 3-4 minutes.

Step 4

Add the vegetable oil, low-fat Greek yogurt, vanilla extract, and lemon zest to the egg mixture. Mix on low speed until just combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the low-fat milk. Begin and end with the dry ingredients, mixing gently after each addition until just combined. Be careful not to overmix.

Step 6

Fold in the pitted and halved cherries gently using a spatula.

Step 7

Pour the batter into the prepared cake pan and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Step 10

Once cooled, dust the cake lightly with icing sugar, slice, and serve. Enjoy your low-fat cherry cake!
