Ingredients

  • 50 grams low-fat margarine
  • 180 grams plain flour
  • 2 tablespoons cold water
  • 50 grams ground almonds
  • 100 grams caster sugar
  • 3 large egg whites
  • 0.5 teaspoons almond extract
  • 4 tablespoons low-sugar cherry jam
  • 100 grams fresh cherries (pitted and halved)
  • 20 grams flaked almonds

Directions

Step 1

Preheat the oven to 180°C (350°F) and grease a 20cm tart tin with low-fat cooking spray.

Step 2

To make the pastry, rub the low-fat margarine into the plain flour until the mixture resembles breadcrumbs.

Step 3

Add the cold water a little at a time, mixing until the dough comes together.

Step 4

Roll out the pastry on a lightly floured surface to fit the tart tin, then transfer to the tin, pressing into the edges. Trim any excess overhanging pastry.

Spread the low-sugar cherry jam evenly over the base of the pastry.

Step 6

In a mixing bowl, whisk together the ground almonds, caster sugar, egg whites, and almond extract to make the frangipane filling. Pour this mixture over the jam, spreading evenly.
