Ingredients

  • 500 g fresh spinach
  • 250 g low-fat cottage cheese
  • 2 large egg
  • 100 g low-fat mozzarella cheese, shredded
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 60 g non-fat Greek yogurt
  • 0.25 teaspoon freshly grated nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 as needed olive oil cooking spray

Directions

Step 1

Preheat your oven to 180°C (350°F). Lightly spray a medium-sized baking dish with olive oil cooking spray and set aside.

Step 2

Wash the spinach thoroughly and remove any tough stems. Place the spinach in a large pot over medium heat and cover. Cook until wilted, stirring occasionally, about 5 minutes. Remove from heat and allow to cool slightly. Squeeze out excess water and roughly chop.
