Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons instant yeast
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 2 cups fresh spinach
  • 1 cup low-fat ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 3 cloves garlic, minced
  • 1 egg, lightly beaten
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

In a large bowl, combine the whole wheat flour and instant yeast. Gradually add the warm water and olive oil, mixing until a rough dough forms.

Step 2

Add the salt and knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic.

Step 3

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Step 4

While the dough is rising, prepare the filling. Blanch the fresh spinach in boiling water for 1 minute, then drain and chop finely.

Step 5

In a medium mixing bowl, combine the chopped spinach, low-fat ricotta cheese, grated Parmesan cheese, parsley, basil, minced garlic, and lightly beaten egg. Season with salt and ground black pepper, and mix well.

Step 6

Preheat your oven to 375°F (190°C).

Step 7

Once the dough has risen, punch it down and turn it onto a lightly floured surface. Roll it out into a large rectangle, approximately 12x16 inches.

Step 8

Spread the spinach and cheese filling evenly over the dough, leaving a 1-inch border around the edges.

Step 9

Carefully roll up the dough starting from one of the long sides, sealing the edges by pinching them together.

Step 10

Transfer the rolled dough onto a baking sheet lined with parchment paper. Gently form it into a circular or oval shape if desired.

Step 11

With a sharp knife, make a few slits on top of the bread to allow steam to escape during baking.

Step 12

Bake in the preheated oven for 25 minutes or until the bread is golden brown and firm to the touch.

Step 13

Remove from the oven and let it cool on a wire rack for at least 10 minutes before slicing.

Step 14

Serve warm or at room temperature. Enjoy your Low Fat Cheesy Spinach and Herb Stuffed Bread!
