Ingredients

  • 4 large Eggs
  • 0.25 cup Low-fat milk or skim milk
  • 0.5 cup Low-fat cheddar cheese
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Ground black pepper
  • 1 spray Non-stick cooking spray
  • 1 tablespoon Chopped fresh chives (optional)

Directions

Step 1

Crack the eggs into a mixing bowl. Add the low-fat milk, salt, and ground black pepper. Whisk the mixture until fully combined and slightly frothy.

Step 2

Preheat a non-stick skillet over medium-low heat and lightly coat it with non-stick cooking spray.

Step 3

Pour the egg mixture into the skillet. Allow it to sit undisturbed for about 30 seconds until the edges start to set.

Step 4

Using a spatula, gently push the eggs from the edges towards the center. Continue to do this in intervals, letting the unset eggs flow to the edges of the pan.

Step 5

When the eggs are mostly set but still slightly runny, sprinkle the low-fat cheddar cheese over the top.

Step 6

Fold the eggs over the cheese gently, turning them to fully incorporate the melted cheese into the scrambled eggs.

Step 7

Remove the pan from the heat while the eggs are still slightly creamy, as they will continue to cook from residual heat.

Step 8

Garnish with chopped fresh chives if using. Serve immediately for the best texture and flavor.
